Spelt Saison Aged in Oak
Made with locally grown spelt from Thrall Family Malt (Windsor, CT)

Saison represents not only a style of beer, but an approach to brewing. Historically, saison was brewed on a farm using whatever grain was around, some malted, some raw with funky, natural elements. We named this beer Closer To the Point to tie our little urban brewery to the essence of this style: local ancient grains sourced from great farms, brought to life through flavor, which this beer certainly has plenty of.
Tons of complexity from natural oak aging with house cultures for 12 months. Notes of apricot and cream of wheat. Proper aged funk as well as some present oak character, akin to Wandering Bine. Surprisingly not sour, and spelt imparts a slight nuttiness and creamy body.
The Dictator is the People, our saison featuring Red Fife Wheat, is the counterpart to this beer. Counterpart also happens to be the name of one of our Pale Ales! Crazy.
