Barrel Aged Saison with Wildflower Honey
Tasting Notes: Wineberry, Tangerine Pith, Dandelion, Champagne, Cherry Blossom
This is the second time we're brewing this barrel aged saison brewed with raw wildflower honey, reprising a collaboration with Forest & Main first released in 2019.
This beer is fermented entirely with Forest & Main's house yeast culture, sourced directly from the cherry blossom tree located right outside their brewery. Yeast is cultured from the blossoms every spring and used to ferment all of their saisons in that calendar year. The honey comes from Mind Your Hives, an apiary founded by Greg Lehman (of Forest & Main) and his wife, Kara Jo Lehman. Forest & Main and the Lehmans go to great lengths to care for their tree, saison culture, and bees. Beer doesn't get more local than this.
Presented in a green 750 ml bottle, this beer really "brings the outside in" through both its use of carefully cultivated ingredients and embrace of lightstruck saison character.
