Jérôme Galaup represents the fifth generation of winemakers to work these biodynamic vineyards in Gaillac and the wine L’AngeLou is made using the ‘méthode ancestrale’ of Champagne. Angelou in the local language Occitan, means “little angel” and, in this context, "fine little bubble.” A sparkling wine also known as a petillant-naturel, this wine is made without sulfites, and is disgorged to keep it from being cloudy.
