Saison & Mixed Culture

We're in awe of the magical process of fermentation. Brewing with saison yeast and our house mixed cultures is less about upfront taste vs. luring out flavors and aromas. These beers are the most wine-like in our portfolio, sometimes long-aged in stainless steel or wood for up to two years with minimal brewer intervention. They also incorporate local ingredients such as whole fruit from small farms or heritage grains. Each barrel is unique and progresses at its own pace. Brewing these beers is a courtship that rewards patience and respect for nature’s bounty.
